Potato Salad
2lbs. potatoes(any kind,I like red)
1/2cup fat free mayo
1/2cup fat free sour cream
1-2Tb. balsamic or red wine vinegar
1-2Tb. sugar
1-2Tb. mustard(any kind,I like brown)
1 med. onion,chopped
2 stalks celery,chopped
2-3 hard boiled eggs,chopped
3-4 slices cooked bacon,crumbled
salt and pepper
Cook potatoes till just done.cool
cut potatoes into bite size chunks. add onion,celery, eggs and bacon.
mix remaining ingredients and pour over potatoes.
salt and pepper to taste
you can also garnish this parsley or add other herbs that you like.
you can also use this for macaroni salad.

ok well I ended up peeling mine and left out the hard boiled eggs ( my kiddos don't like them) ...it turned out great though,

I've had a hankerin' for some good Buffalo wings of late. I've tried a few sauce recipes, and a few bottled wing sauces, but none have had that really good flavor. By "good" I don't mean super HOT, as that, to me, is a hot wing, not a Buffalo wing. Best I've everh had was at a bar in upstate NY lake region, even better than ones I've had in Buffalo, NY. So, anyone got a really good Buffalo wing recipe they're willing to share?
I don't have much to offer in trade as most of the stuff I make is kinda straightforward.

STUFFED SWEET PEPPER SOUP
1 lb. ground beef
2 qts. water
1 qt. tomato juice
5-6 peppers diced (any color)
1-1/2 cups chili sauce
1 cup uncooked long grain rice(I use brown and it works fine)
2 celery ribs diced
1 onion(large)
3 beef boullion cubes(chicken works too)
2 garlic cloves minced
salt and pepper to taste
In a Dutch oven brown the beef and drain.
Add all the other ingredients EXCEPT the rice.
Simmer for 1 hour and then add rice and simmer for another 20-30 mins.(till rice is cooked)
Makes 4 quarts of soup.
This tastes just like the real stuffed peppers only you don't have all the steps and it's faster.

OK Snoopy.Heres that recipe.It came out of a recipe book from Better homes and gardens.Don't know how good it is.
Buffalo Wings
16 wings(about 3 lbs.)
1 1/2 cups chili sauce
3-4 Tbsp. of hot pepper sauce.
Blue cheese dip.
Cut off wing tips.Cut wings into two sections.Rinse and pat dry.Place chicken on broiler pan.Broil 4-5 in. away from heat about 10mins. till chicken is browned.Place in 3 1/2-4 qt. slow cooker.Combine chili sauce and hot sauce and pour over chicken.
Cover and cook on LOW for 4-5hrs. or on HIGH 2-2 1/2hrs.
This sounds like hot wings to me what with the hot sauce.
I don't see why you couldn't just omit it altogether or add just 1Tbsp. for flavor.Also why couldn't you add some cummin for flavor?And maybe a pinch of cinnamon.Just a pinch.Add some worchestershire too.
I have to be honest and say that I've never had any kind of these wings.Buffalo or hot.Just never got around to it.

In a wide bowl, combine the flour, salt and pepper. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the bread crumbs, Parmesan cheese, parsley and orange zest.
Heat about 1/2-inch oil in a wide, heavy skillet over a medium-high flame.
Dredge the tomato slices first through the flour, lightly coating both sides. Next, drag each floured slice through the egg-milk mixture, again covering both sides. Finally, place the slices in the bread crumbs, coating both sides evenly.
Fry the tomato slices two or three at a time, turning once, until golden brown on both sides. Return to the cooling rack to drain excess oil. Serve hot.

Here's one for you. My wife and I were very surprised with this one. Very Good:
Grilled Haddock with Dill
1/3 Cup Mayonnaise
2 tsp Apple Cider Vinegar
2 tsp Dry Dill
2 tbsp Melted Butter
1 tsp Lemon Juice
2 garlic cloves finely chopped
Salt/Pepper to taste
Haddock Filets
Combine first 6 ingredients.
Place Haddock Filets on grill rack. Brush Filets with the Dill Sauce. Grill for 5-6 minutes. Turn and coat with Dill Sauce. Grill an additional 5-6 minutes or until fish is flaky.

WVD, I figured the fried green tomatoes would go over good, seems to be coming up on the season for the last fruit of the vine. I don't particularily like FGT's, find them too sour.

SPICED HOLIDAY COFFEE
Get the coffee ready the way you normally do and the add to the grounds:
1/2 tsp. cinnamon-ground
1/8 tsp. cloves-ground
1/8 tsp. nutmeg-ground
Brew as usual
*this is just to start. you can adjust the spices to your liking.
* optional*-- add 1/4 cup of orange marmalade to the caraffe before brewing the coffee.
* i like to add a couple of whole allspice and a star anise! yum!.*

Want to try something really neat with this recipe.... eliminate the orange zest then:
After frying the tomatoes, layer them in a baking pan placing some mozzerella cheese and good tomato sauce between layers... or if you are like me some riccotta cheese and mozzerella with sauce... makes real neat casserole... kind of like eggplant parm without the eggplant.... you can also add crumbled fried italian sausage or ground beef.... of course serve with some good garlic bread...

I have one recipe, grilled rockfish, but I didn't have the ingredients last night so I tried I tried this recipe with rockfish instead of haddock and sour cream instead of mayonaise. It was excellent! Thanks.
It was also much easier than mine:

Cucumber, Kiwi, Mango Relish
· 2 Kiwi, skin removed and quartered mango, skin

· 1 coarse diced tbsp prepared pickled ginger
· 1 clove garlic, coarse diced
· ½ tsp. sesame seed oil
· 1 tsp olive oil
· 2 tsp fresh lime juice

· ¼ tsp Accent
· 1 tbsp soy sauce
Put all ingredients in food processor and mix until the consistency of relish. Remove to a container and refrigerate.
Crisp of Leek
1 leek, cut into thin strips
Cut leek in half and wash thoroughly to remove any dirt. Dry completely. Cut into 3" strips. Fry in hot oil for 15-30 seconds or until crisp. Remove to bowl with paper towel in it to soak up oil. Keep warm but do not cover.
Roasted Red Pepper Cream Sauce
· 2 red bell peppers, roasted, skinned seeded into quarters
· ¼ of a medium yellow onion, skin removed, roasted & quartered
· 2 tbsp fresh parsley chopped
· ½ tsp celery seed
· 1 tsp dry mustard
· 2 tsp sambal Oelek*
· ¼ tsp thyme
· ¼ tsp coriander
· ½ tsp dill weed
· ½ tsp Accent
· 4 tbsp olive oil
· ¼ cup heavy whipping cream
· salt & pepper
*Available at Asian Food Stores
Grill peppers until skin is blackened on all sides, remove from grill and place in bowl, cover with foil. After 10 minutes remove from bowl. Skin, seed and cut. Set aside. Grill onion while grilling the peppers. Grill 3 to 4 minutes per side. Remove from grill and quarter. Set aside. Put the peppers, onion, parsley, celery seed, dry mustard, sambal Oelek, thyme, coriander, dill weed and Accent in a food processor mix until very fine. Slowly add olive oil to mixture and blend until smooth. Put contents from food processor into sauce pan and bring to a simmer over medium heat. Add cream and stir. Add salt and pepper to taste. Keep warm.
Prepare the Serving Plate
Use a large round plate. Put cream sauce in the center of the plate and swirl it out to the sides. Place the fish in the center of the plate. Put spoonfuls of the relish on the sides of the plate. Top the fish with crisp of leek. Garnish entire plate with minced parsley and OLD BAY.
In my style of cooking success is directly proportional to the amount of dishes you have to clean afterwards.

Greedy's shrooms
Ingredients:
2 cups Cornbread, Crumbled
1 cup Fresh Bread Crumbs
1 Egg
1 cup Chopped Onion
1/2 cup Chopped Celery
1 Bell Pepper Chopped
1 cup Flaked Crab Meat
1 cup Salad Shrimp, Chopped
1/2 teaspoon Tarragon Leaves
Salt and Pepper
2 Cloves Garlic Crushed
6 Portabella Mushrooms, Stems Removed
1/2 cup grated Parmesan
3 tablespoons Melted Butter (Unsalted)
1 cup Grated Mozzarella Cheese
3 tablespoons Olive Oil
3 tablespoons Balsamic Vinegar
Directions:
In a Large pan combine celery, onions, peppers, garlic and butter, cook until vegetables are just soft, combine with breadcrumbs and cornbread, dice stems of mushrooms and add to mixture, add salt and pepper to taste and the tarragon leaves, add Parmesan cheese and egg, add seafood, mix well, mixture should be easily pressed into "Stuffing consistency" if too dry add melted butter. set aside In a large skillet combine olive oil and vinegar until hot and braise your mushroom caps, until just heated through and beginning to change color. pat dry, Divide stuffing mixture into 6 equal portions and stuff caps of mushrooms, sprinkle tops with grated mozzarella, and bake at 375 degrees F until cheese is bubbly and stuffing is "Set" Excellent First Course or Cut into 1/4 for Appetizers.

I second that, allrecipes.com is phenomenal.....
Allrecipes is more of the average Joe or Miss Joe type website, so the recipes are more my style. And the reviews are great, more detailed then food networks std. star system. Also they have this really cool feature to size any recipe to the desired number of servings, adjusting all the ingredients accordingly. Very nifty and convenient for a bachelor like myself, lol!
I really like foodnetwork.com as well but the recipes tend to be lengthy and have hard to find ingredients.

But they still have some great recipes and ideas!

2/3cup Honey
15 choc.graham crackers
1cup crunchy peanutbutter
1/2cup nonfat dry milk powder
1cup coconut
Crush the graham crackers in between wax paper or use food processor.
Combine crackers,honey,peanutbutter and powdered milk in large bowl.
Roll into small balls and place on wax paper.
Roll balls in coconut.
*you can use toasted coconut*

2am Drunken BreakfastBake some buttermilk biscuits. Pull one apart and put it on a plate. Cook eggs however you like best and slide 'em from the pan on top of the biscuits. Pour some of that white country gravy over top. Bake some of those frozen diced hash brown potato things and put them all around the sides. Great big glass of orange juice. Two Tylenol.
Carnivores, insert breakfast meats wherever you'd like.
It's just a big pile of carbs that taste GREAT when all you've had for the evening was liquid.
Warning: two drunks in the kitchen making this at 2am produces a HUGE mess, especially if a carnivore insists on making bacon. Grease everywhere!
Disclaimer: this recipe was inspired by Bob Evan's Country Biscuit Breakfast which appears less sloppy, with crumbled sausage and shredded cheddar cheese added.

Well, since it's the holiday season................
Cuervo Christmas Cookies
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
Lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila
Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup just in case.
Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit, Pick the frigging fruit off floor. Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver. Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Check the Jose Cuervo.
Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

EGG NOG
12 egg yolks
1 cup sugar
1 tablespoon vanilla extract
1 pint heavy cream
1 pint milk
1 pint whipped cream
6 egg whites whipped to soft peaks
1 teaspoon cream of tartar
1/2 gallon of good vanilla ice cream
freshly grated nutmeg
bourbon
rum
Whip the yolks and half the sugar until light yellow. Combine the cream and milk, place on low heat and raise the temp to 160 degrees. In a large pot temper the egg yolk mixture by adding a small amount of hot milk mixture to it gradually raising the temp of the eggs so as not to scramble the yolks. Add the rest of the milkmilk Then add the ice cream to the mix and let it melt over low heat, let cool. Add the whipped cream and fold in,In a seperate bowl beat the whites to soft peaks continue beating and add the cream of tartar, vanilla and the rest of the sugar. Add to mixture and season with bourbon and rum to taste. Stir to combine.
pour in glasses and add nutmeg--ENJOY!
I know this sounds complicated but it is worth it.

Dinner tonight
Cook: 15 minutes
Servings: Serves 4
1 lb. boneless beef sirloin steak, cut 1-inch thick
1 large green, red or yellow bell pepper, cut 1-1/4-inch strips
12 large mushrooms
1 package long grain and wild rice blend (6 ounces)
1/4 tsp. salt
1 Tbsp. fresh lemon juice
1 Tbsp. olive oil
1 Tbsp. water
2 tsp. Dijon-style mustard
1 tsp. honey
1/2 tsp. dried oregano leaves
1/4 tsp. pepper
Trim fat from beef steak and cut into 1-1/4-inch cubes.
In a large bowl whisk together lemon juice, olive oil, water, mustard, honey, oregano and pepper. Add beef, bell pepper and mushrooms, tossing to coat.
Alternately thread pieces of beef, bell pepper and mushrooms on each of four 12-inch metal skewers.
Prepare rice according to package directions; keep warm.
Meanwhile place kabobs on rack in broiler pan so surface of meat is 3-4 inches from heat. Broil 9-12 minutes for medium-rare to medium doneness, turning occasionally. Season with salt.

FROZEN KEY LIME PIE
1-1/4 cups crushed pretzels
1/4 cup sugar(or substitute equivalent)
6 Tbsp. butter or margerine
1 can(14oz) sweetened condensed milk( I use fat free)
1/2 cup lime juice
1 env. kool-aid lemon/lime unsweetened drink powder
1 tub (8oz) cool whip thawed,divided( I use fat free)
Mix crushed pretzels,sugar,and melted margerine. Press firmly onto bottom and sides of a 9 inch pie pan.
refriderate until ready to fill.
Combine condensed milk,lime juice,drink mix in a large bowl till well blended. remove 1/2 cup of wipped topping; set aside. Gently stir in remaining topping. Pour into crust.
Freeze 6 hours or overnight. Let stand at room temp 15 mins.,or until you can cut the pie easily. garnish with the remaining topping. Store in the freezer any leftovers.

Something quick and delish for dinner....
On the grill...
Slice up some squash or zucchini, onions, red bell pepper, fresh peaches in skins.
Put it all on a piece of aluminum foil and make it into a packet. Pour a little balsamic vinger salad dressing on it, and some garlic pepper. Put it on a covered grill for about half hour. Put some chicken on the grill too if you like.
Sooo good. The peaches give it a little sweet with the sour flavor. Real healthy too. Can add any variety of veggies that you like. Enjoy.

They've got Bing Cherries for $1.69/lb and blueberries for $1.25/pint at the WalMart in Chambersburg! Now, what can I do with them for Sunday morning breakfast? I wonder if they will remain uneaten that long? HMMMMMMM????
