Not sure if anyone has started a topic like this, but here it goes... I am thinking of having stuffed peppers for dinner tonight, but I was thinking of a way to sprice them up a bit or with a twist for something different. Anyone have any ideas?

McCormick has a spice called "Hot Shot" that gets used alot here. Its a good easy way to spice something to the "oh wow" side without ruining flavor.

You can always do them the mexican way. Use some taco seasoning mix, then chili sauce and salsa for the tomato sauce.
I don't bother with all the stuff you have to do to make them the old way anymore. If we get hungry for stuffed peppers I make my Stuffed Sweet Pepper soup. It has all the same ingredients of the harder way and tastes exactly like the oringinal.

Bentley's Bagels did a stuffed pepper lunch special a few week ago, and he filled them a little differently -- he lined the insides of the bell peppers with slices of pepper jack cheese first, then put in his filling (which included brown rice, spices, meat, and tomato sauce, i believe) then baked them. I didn't have one but I heard that they were a huge success. I never thought of lining the peppers with cheese before, and thought it sounded like an awesome idea! Too bad my other half hates stuffed peppers.

How about cornbread casserole........a recipe my son found for me when he heard me talking last year on the phone with my doc about not being able to eat wheat. One inch layer of browned ground beef in a pan, topped by a layer of kidney beans, followed by a layer of shredded cheese, and topped with about half an inch of cornbread batter. ( I use my own recipes to avoid gluten, but cornbread mixes and recipes are pretty adaptable and easy to work with) bake it at 375 for about 40 min., or until the cornbread is done. We eat it with picante sauce on it or with tabasco sauce.
Another fav around here are chicken drumsticks fried in olive oil with paprika and salt.

We try to limit carbs, so when hubby makes stuffed green peppers, he substitutes chunk cheddar cheese for the rice. Yum!

Anytime I need a little salty kick, I break out the Worchestershire sauce. I put that in a lot of stuff, including the tuna salad I'm eating right now for lunch.

Another unique condiment to put in tuna salad (or chicken salad) is about 1/4 - 1/2 tsp. of Chinese hot mustard. It really adds a nice kick.

Old Bay is good in tuna salad also (and egg salad); gives it that chesapeake bay steamed crab taste.

I agree! I put Old Bay in my tuna, but haven't tried it in egg salad. Will give it a go.
Curry in egg salad is yum-yummy. Hmmm, may have egg salad for dinner tonight!!

Thanks guys! Some yummy ideas! I ended up stuffing my peppers with a mexican flare to it. Used the taco seasoning & some shredded pepper jack cheese - topped off with some salsa. Served with some ChiChis corn bread... Yummy!!! I want to try the stuffed pepper soup & the cornbread casserole - sounds like they would go great together! I had this roasted red pepper soup at a place in Frederick that is no longer open - it was awesome! I think I am going to look for a recipe for that, too!

it's an easy recipe and you can change it up however you like it. Mexican, American, Italian.

Salmon fillets. Sprinkled liberally with Old Bay Seasoning and wrapped in aluminum foil with a can of diced tomoatoes (I prefer the Del Monte Diced Toms with garlic and olive oil). Bake at 375 for 30 minutes. Yumm!

Siriunsun........I made your cornbread casserole this weekend and everyone enjoyed it . I even made one for my parents and it turned out better than mine, that time I added the picante sauce on top of the ground beef and cooked it. Thanks for the recipe! I'm always looking for new ideas.

I have a freezer full of deer burger. What can you put in burger when you're pattying it to give a little zest. Deer's so lean I feel like it needs a little something for more flavor. Tonight, I crumbled up a few slices of bread for stickiness and a bunch of Worcestershire sauce. I've had onion soup mix mixed in, but didn't really dig it. What else?

You right SMan it`s real lean
You have to put regular hamburger with it to juice up the lean meat.
I make pizza burgers sommtimes. A little pizza sauce and cheese in between 2 thin layers of burger. Fry it up and put lettace and some hot sauce on it. Or I just make Sloppy Joes ( they call them steamers in this area.)

I have a friend who makes this fantastic stew with deer meat. Usually, all I can eat is the loin - but this stuff was excellant. I know it had chili sauce & grape jelly in it, along with a few other ingredients. I'll see if I can track down the recipe for ya... I was the best I have ever had!

Plain old H2O will make any lean ground meat juicy.
or Red wine of some sort would certainly give it the juiciness you're looking for and the flavor of the wine, so make sure it's a Red that you would drink.
Garlic, rosemary,parsley, or thyme would go well with ground meat. Rosemary has a very woodsy flavor so it may well go great with the deer meat. Just make sure it's finely chopped. You don't want a rosemary "stick" to get stuck in your teeth.

I like the pizza idea. I like the mixing in spices idea, too.
If I use water, will that also help keep the burgers hold their shape without crumpling? I can't believe I'm complaining about a meat being too lean.

I've always used a beaten egg as a binder.
some use just a little flour, but I never cared for that.
bread or crackers just extend the amount of meat so it feeds more people.
You could try some steak sauce to flavor the meat also.

Great tips on seasonong and tenderizing. I enjoyed some deer burgers at my Uncle's home. Guess it depends on the cook and technique, it was good. I will check back for more ideas. Thanks.
I made a pita pizza w/ veges but really enjoyed a meatloaf, using a recipe from a local Church cookbook.

When I make burgers, I add dried onion flakes, fresh ground pepper, Worcestershire sauce, garlic powder, dried parsley flakes, and a small (maybe 4oz?) can of tomato sauce. Now I am an "eyeball" kinda cook, no real measuring so the amounts of the above depend on how much burger I start with. If I have meat with a lower fat content, I'll make a little pocket in the middle of the burger with my thumb and add a frozen pat of butter or margarine and cover it over with burger meat. I say frozen because it won't melt as fast during the cooking process (I use a low to medium heat for my burgers) and it will add a nice juicy flavor to the burgers when it melts in with all the above seasonings. Sometimes depending on the wife’s request, instead of the butter, I’ll make the pocket a little bigger and add pepper jack or blue cheese to the middle, makes a great stuffed burger.

Not having gas for a week meant no hot hoter or stove or oven. I am so thankful to be cooking anything. Yeehoo, life is good. Saturday I will have to cook something worth the celebration of not living back in the stone age........................

wow, that sounds DELICIOUS. my mouth's watering for a buttery burger and it's not even 9:00 a.m.! i never thought of doing that but will try it next time. thanks, smokechaser!
i was going to suggest for the lean deer meat that you mix in a little extra-virgin olive oil and Montreal steak seasoning when making the patties (McCormick makes it, I think, it's in the spice aisle at any grocery store), then sprinkle a bit more of the steak seasoning on each side. but i think the butter idea sounds tastier (and NAUGHTIER too, hee hee)

I made a deer meat loaf for dinner. I mixed in some wheat bread crumbs, a little Egg Beater, and a bunch of A-1. I topped it with Montreal Steak seasoning.

Last night was garlic & herb (I cheated and used an A1 sauce) marinated chops with cheezy flavored instant

mashed taters and a canned veggie. I was trying to use stuff on hand since we're leaving for the beach this afternoon.
Tonight will be AYCE crabs somewhere in OC.

I actually took the easy route & just basted with a sweet pepper jalapeno jam made by Tastefully Simple. It was yummy & super easy!
