This is a chocolate, banana lovers delight, fresh from the griddle and deliciously creamy. It’s very easy to make and something you can get the kids involved with when you want to have special breakfast time.
Don’t let the bananas get too ripe or they will simply squish out of the sandwich when pressed in the griddle.
For variations try adding honey, crunchy peanut butter or Nutella. You can also go upscale and add in marshmallow fluff, or add some mini marshmallows to the filling, the skies the limit.

Chocolate and peanut butter grilled breakfast panini
8 slices of French bread, sliced diagonally into 1/2 –inch thick slices
1/2 cup melted butter
1/2 cup creamy natural peanut butter
4 ripe bananas
3/4 cups dark chocolate topping
1/4 cup dark syrup
Preheat panini grill to 325 degrees.
For each sandwich, brush 2 slices of bread lightly with butter.
On a flat work surface, arrange butter side up.
Spread 1 tablespoon peanut butter evenly over each slice of bread.
Slice 1 banana and layer evenly over bottom half of sandwich. Close top half of sandwich, brush butter on outside and place into panini grill for 1 to 2 minutes. Diagonally slice the sandwich in quarters; arrange on plate.
Serve with syrup in monkey dish and a 1/2 cup of mixed berries on side. (See recipe below)
Makes 4 servings.
1 pint strawberries, halved
1 pint blackberries
1 pint raspberries
In dish, mix berries. Serve with breakfast panini.
