Crab Cakes
Ingredients:
1 lb blue crabmeat
1 diced red bell pepper
2 ribs of celery, diced
1 egg
1 teaspoon dijon mustard
2 oz bread crumbs
Directions:
Mix the egg, mustard,bell pepper and celery in a mixing bowl, then add the crabmeat and the breadcrumbs as needed. Sprinkle with seafood seasoning, to your taste. Make into patties and dredge in flour. Pan fry in clarified butter or an oil of your choice for about 1 1/2 min per side. Place on a bed of mixed greens
Warm Scallop Salad
Ingredients:
3 large sea scallops
mixed greens
green apple
avocado
tomato
Dressing
2 oz. olive oil
1 oz. chopped onion
1 clove crushed garlic
2 slices cooked bacon, chopped
1/4 oz of fresh lemon juice
1oz. of cider vinegar
Directions:
Heat the olive oil and add the onions, then the garlic. Add the bacon and toss together. Add the lemon juice, then the cider vinegar and set aside. While you are making the dressing , you should be heating your pan. In hot oil sear the scallops for 1-2 mins on each side. Place on mixed greens and top with the dressing and serve.
